Buffalo Chicken Burgers Serves 4
Ingredients:
For burgers:
1 lb ground chicken
1 egg
1/2 cup panko breadcrumbs (gluten-free as needed)
2 tbsp frank’s red hot sauce
1 stalk chopped celery
2 green onions, sliced thin
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp sea salt
1/4 cup crumbled blue cheese
dash cayenne pepper (for heat, optional)
oil to cook
Blue cheese sauce:
1/3 cup mayonnaise
1/3 cup sour cream
1 tbsp lemon juice
1/4 tsp garlic powder
1/4 tsp onion powder
pinch sea salt (to taste)
1/4 cup crumbled blue cheese (the stronger the cheese, the more robust your dressing will be!)
To serve:
Toasted buns (gluten-free as needed) or lettuce wraps
lettuce and tomato
Instructions:
To make burgers, combine all burger ingredients in a bowl. Use hands to form into four balls and press into thick burgers.
To cook, coat a grill pan or cast iron pan with oil and heat to medium-high.
Add burgers and cook for 5-6 minutes per side, until cooked through (internal temperature is 165F).
While burgers are cooking, whisk together blue cheese sauce. Serve on toasted buns or lettuce wraps with blue cheese sauce and tomato slices.
