
Happy Monday, healthy mamas!
It’s time for another weekly meal plan! Can you believe it’s only one week until the week of Christmas?! This year has flown by, that’s for sure. This week’s meal plan is the start of three weeks where I am just trying to use what we have on hand in the fridge, freezer and pantry before Christmas and my work retreat at the end of the year (which is really just me hiding out in an air b n b, because #pandemic), but I won’t be posting a meal plan, then!
Here’s what’s on our meal plan, this week:

Meal 1: Pizza Chicken Tenders + sweet potato fries + broccoli (frozen)
We had a couple of packs of Butcherbox chicken tenders in the freezer, so we decided to make some of our favorite almond flour breaded chicken tenders! These are some of our kids’ faves.

Meal 2: Slow Cooker White Chicken Chili
White Chicken Chili… but make it in the slow cooker! This week I have a couple late work-nights, so I’m utilizing easy dinners (the beauty of meal planning!).

Meal 3: Butternut Squash Chickpea Curry + Cauliflower Rice
Another easy swap is using frozen instead of fresh butternut squash for this creamy vegan curry. YUM. Here’s the recipe for this pantry staple-filled meal! We’re serving it up with some cauli rice that’s in the freezer.
Meal 4: Sausage with peppers + onions + rice
No recipe for this one, because we really just get the rice in the rice cooker, sautee up the peppers and onions (we use frozen from Trader Joe’s), cook up the sausage and we’re good to go! EASY. Remember, meals do not have to be hard!
Meal 5: Pasta Night
I’m at my mom’s, this night, teaching my usual Instagram Cook with Kris and hosting a charcuterie class for our Supermama Society virtual holiday party and vision board setting and I can’t wait! I love my society ladies (the Society opens up again at the end of the month!)

What I’m prepping ahead:
You guys, I shared this over on Instagram (because I find it hilarious) but yesterday my cat woke me up at THREE in the morning. So I got up and started working. Except it meant after church and shopping for some Christmas greenery, I FELL ASLEEP. ????????♀️ Since it was late, I just prepped dinner and decided this week is a prep-free one, to show you that it HAPPENS, guys- perfection is not necessary to be a meal prepping mama!
