
Well, the first week of the new year was, well… easy isn’t the word I would use. But thankfully, even if the world feels hard- meals can still feel easy! This week’s family dinner plan is filled with some of our family favorites. Here’s what’s on our meal plan, this week:

Meal 1: Pasta with cashew cream + broccoli
My daughter requested pasta with cashew cream, this week- thankfully it comes together in no time, so I was happy to oblige!Here is my favorite easy dairy-free cashew cream recipe

Meal 2: White Bean Soup with kale
I shared this one last week– but we ended up having dinner with my parents so decided to use up the leftover chicken we had in the fridge and do chicken soup, instead. Here’s the white bean soup And my favorite comfy classic chicken soup recipe
Meal 3: Anything You Have Coconut Curry Soup from Pinch of YumLove this simple + tasty recipe (especially because it helps me use up what’s in my fridge!)

Meal 4: One Pan Chicken Fajitas

What I prepped ahead:
I did ingredient prep this week (I talk about all three styles of meal prep in my meal prep course) so it was just a quick veggie prep, with some broth +
- Veggies: dice carrots, celery and onion
- Veggies: chop kale
- Veggies: chop cabbage
- Veggies: dice onions + peppers
- Veggies: chop sweet potatoes (I waited on this because I’m using white sweet potatoes and they do brown, but if I were using orange, I’d prep ahead!)
- Make cashew cream
- Make vegetable broth in the instant pot
Total time: ~20 minutes active, ~60 minutes total with broth in the instant pot
