Happy Monday, mamas! I hope you all had a beautiful Valentine’s Day weekend (did you catch the little healthier brownie batter energy balls we made and enjoyed, this weekend?), I know we did! We’re ready to jump into this full week with some delicious recipes.

Here’s what’s on our meal plan, this week:

Meal 1: Skillet Chicken Pot Pie

This recipe is in the works– but the base is the same as the stew I made a couple months back over on my weekly Instagram Cook with Kris lives- so you can watch the replay below if you’re curious how I make it!

Meal 2: Sweet Potato, Kale and White Bean Soup

This easy soup recipe is on repeat in our house, all winter long! Sometimes we make it with sausage, sometimes we leave it out, but it’s always delicious.

Meal 3: Instant Pot White Chicken Chili

Another repeat all winter long, we’re using the leftover chicken from the chicken pot pie for this easy instant pot chili! We almost always have the ingredients for this recipe on hand, so it’s on our meal plan often.

Meal 4: Miso Veggie Bowls

No photo for this recipe (it’s a part of a new secret project I’m working on, you’ll find out about soon!). Just think a base of rice, with lots of veggies and a deliciously creamy miso tahini sauce. YUM.

Meal 5: Date Night Pasta

This week on Cook with Kris over on Instagram, I’m making an easy and delicious date night pasta (which is actually perfect for the whole family!). This month we’re going beyond the basics and taking your meals up a notch with sauces, dressings and more!

What I prepped ahead:

  • Shredded chicken (in the instant pot) for 2 meals
  • Chopped carrots, celery and onion for 3 meals
  • Chopped broccoli for 2 meals
  • Chopped sweet potato for 2 meals
  • Made brownie batter balls for snacking

Total time: ~30 minutes active (SO easy)
