Happy Monday, mamas! This week is a slow one compared to last– but with lots of podcast interviews, I’m still relying on quick meals! This week is filled with some of our family’s favorites- from egg roll in a bowl (catch a new Youtube video of me making this, below), almond flour chicken tenders and of course- corned beef, cabbage and irish soda bread for St. Patty’s day!Fun fact: I went to Ireland when I was 13! A family member got married (in a castle, no less) and we spent 10 days exploring the beautiful island. I’m almost 50% Irish by our calculations, so we love to celebrate St. Patty’s (even if it’s not really traditional to celebrate how we do, over there!).Here’s what’s on our meal plan, this week:

Meal 1: Egg Roll in a BowlThis week I also made Korean beef bowls (recipe to come) and there was some crossover in ingredients, so I decided to throw together a quick egg roll in a bowl to welcome in the week! We all love this recipe- and it comes together in no time!

Meal 2: Almond flour chicken tenders + roasted broccoli

I have a couple portions of leftovers from recipe testing this weekend- but not enough for the whole family, so I decided to throw together some easy chicken tenders for the kids to have. This recipe is their favorite!

Meal 3: Chickpea pasta with cashew cream

I have a busy week of interviews, this week- so we’re keeping meals simple! This cashew cream sauce is tried and true, the kids LOVE it and takes less than 15 minutes for dinner to be ready, start to finish. We’ll serve it with a veggie on the side- haven’t decided what, yet!Make it:Dairy-free cashew cream sauce

No prep this week- we’re keeping it simple! Sometimes it’s nice to have a break, even as much as I love how meal prep sets us up for a healthy and stress-free week– this week easy meals have us covered.
