
Happy SPRING! ????????♀️???? Who else is SO ready to shake off the winter and welcome in some warmth and sunshine? We’re slowly transitioning into spring, with this week’s meal plan. Still some slow cooker meals, but I am SO excited to get back to the farmer’s market and bring more fresh flavors, into our meals!
Here’s what’s on our meal plan, this week:
Meal 1: Skillet Chicken Pot PieStill working on getting this one up on the blog for you– it’s similar to my chicken pot pie stew (see the live replay on how I make this one, here) but in a skillet with biscuits on top. SO good. One of my favorite winter-to-spring transition dishes.
Meal 2: Slow Cooker Herbed Chicken + Roasted Veggies
There were whole chickens on sale at Whole Foods so you know I was all over that! I love making a whole chicken in the slow cooker- we have dinner plus leftovers, and I can make homemade broth which I was long overdue, for! I always serve my slow cooker chicken with a ton of roasted veggies (we’re doing sweet potato and broccoli, this week).

Meal 3: Chicken and Portobello Mushroom Fajitas
I shared a reel last week with how I make these easy one pan fajitas into a plant-based portobello mushroom and I am currently obsessed with the mushroom variety! My family, however likes chicken- so I’m using leftover chicken and we’re doing 50/50 this week.
Make it: One Pan Fajitas
Meal 4: Asian-inspired Chicken Meatballs + cauliflower rice
It has been WAY too long since I’ve made these asian-inspired chicken meatballs, and this week is the week! I love these over cauli or regular rice, always with a good dose of almond butter or the best-ever peanut sauce.

Meal 5: Spring Risotto

This week’s prep:
- I had leftovers ingredients from my greek chicken pitas on last week’s Cook with Kris (watch the replay here) so I made greek quinoa meal prep jars for easy lunches.
- shredded chicken in the instant pot for my skillet chicken pot pie
- chopped carrots, celery and onion for skillet chicken pot pie
