
Happy Monday! I debated whether to share this week’s plan, as it’s a simple one- I’m gearing up for a live meal prep class for my Healthy Mama Meal Prep students on Friday, so we’re taking it easy this week and using up leftovers so we have space to fill it back up with meal prepped goods on Friday!
Here’s what’s on our meal plan, this week:

Meal 1: Chicken curry with vegetables and green curry simmer sauce
Last week I used this on chickpea curry bowls, and I shared this recipe over on my Instagram stories, this weekend- it is honestly one of my FAVORITE sauces I have ever created (I could drink it, seriously). The full recipe is in my Balance in a Bowl book launching later this month (get on the waitlist, here). I’m serving it over chicken and vegetables- whatever we have on hand (I will likely use broccoli and carrots, to use up what’s in the fridge!).

Meal 2: Spring Salmon Bowls
I wasn’t lying when I told you these are on repeat in our house! The salmon is SO delicious (and easy) and I already have carrots, asparagus and peas on-hand. Perfect. Get the recipe: Spring Salmon Bowls
Meal 3: 5-ingredient meatballs + chickpea pasta
We LOVE these easy meatballs in our house! The kids devour them (we usually serve them up with spaghetti squash- pictured- or chickpea pasta, which we have on hand, so we’ll be serving this week) so there are rarely leftovers, but…
Meal 4: Leftovers
Meal 4 this week is LEFTOVERS. Probably not of meatballs, but curry or salmon bowls- we’ll throw together quick and simple meals, this day, because we want to use up what we have and it’s ok to have leftovers nights!

Meal 5: Pasta Carbonara

This week’s easy prep:
- Chop carrots + broccoli
- Cook farro
- Prep meatballs ahead
- Make salted caramel energy balls for snacks
