Happy Monday! It’s official- Balance in a Bowl is coming to your computer (or phone, or tablet) this week and I am SO excited to share this collection of easy dinners-in-a-bowl. As usual, there’s one delicious bowl on our meal plan this week- the rest are courtesy of the prep I did with my Healthy Mama Meal Prep students in our live class on Friday! It was SO fun and I can’t wait to do it again!

Here’s what’s on our meal plan, this week:

Meal 1: Asian Turkey Lettuce Cups

I made these a few weeks ago on an Instagram Live Cook with Kris and they really are one o four go-to spring and summer meals! They’re so easy, and perfectly fresh especially as the days get warmer.

Meal 2: Tex Mex Sweet Potato Taco Pie

This is one of those recipes that always gets ‘YUM’s from family and friends! It also freezes beautifully, so I’ll often make a second one to store in the freezer for friends with new babies!

Meal 3: Moroccan Chickpea Bowls with herb yogurt sauce

This is one of my favorite seemingly simple but crazy flavorful bowls out of Balance in a Bowl.

Meal 4: Quinoa Fajita Casserole

We haven’t made this one in quite some time, and the kids are loving quinoa, as of late- so I’m excited to enjoy this one- it’s everything you love from a fajita, mixed up with quinoa and topped with cheese (always YUM!).

Meal 5: Green Thai Curry Chicken

This week’s easy prep:

  • Prep shredded chicken
  • Cook Quinoa
  • Chop 2 1/2 onions
  • Slice 1 onion
  • Dice 1 bell pepper
  • Slice 1 bell pepper
  • Dice mushrooms
  • Dice sweet potatoes
  • Shred carrots
  • Slice carrots
  • Thinly slice cabbage
  • Slice green onions
  • Chop herbs for herb yogurt sauce
  • Bonus: prep peanut chicken salad + snickerdoodle almond energy balls
