Ingredients

2 tbsp neutral oil
2 eggs (whisked)
1/2 cup creamy peanut butter
3/4 cup milk (of choice)
1/4 cup maple syrup
2 tbsp brown sugar
1 tsp vanilla extract
2 cup rolled oats
1 tsp baking powder
1/4 tsp kosher salt
6 tbsp jam (flavor of choice)
Instructions
- Preheat oven to 350. Spray a silicone muffin pan or line with liners.
- In a large bowl, whisk wet ingredients (through vanilla).
- In a separate bowl, whisk oats, baking powder and salt.
- Stir oat mixture into wet ingredients. Spoon a scant 1/4 cup into muffin cups (12 total).
- Spoon 1/2 tbsp (1 1/2 tsp) jam into the center of each muffin cup.
- Bake in oven 22-24 minutes until just set. Let cool and serve.
