Pineapple Teriyaki Ground Beef Stir Fry

1 tbsp neutral oil (divided)
1 lb ground beef (alternately, this recipe works great with thinly sliced steak- see notes)
kosher salt (as needed)
black pepper (as needed)
1 onion (sliced)
1 bell pepper (sliced)
2 whole garlic cloves (minced)
1 1/2 tsp ginger (minced- about 1” piece)
2 cup broccoli (chopped small- about 2 small heads)
2 cup pineapple (chopped)
10 oz teriyaki sauce (1 ¼ cup– store bought or homemade)
2 green onions (sliced thin)
2 tsp sesame seeds


Instructions

  1. Heat 1 tbsp oil over medium-high heat. Add beef, season generously with kosher salt and pepper and cook until no longer pink. Remove and set aside.
  2. To the same pan, add onion and bell pepper. Season and saute until soft. Stir in garlic and ginger.
  3. Stir in broccoli and cook for 1-2 minutes until broccoli is bright green. Add teriyaki sauce and bring to a simmer. Cook for 2-3 minutes.
  4. Add beef back to pan along with pineapple. Let cook 3-4 minutes until pineapple is warm and broccoli is cooked through. Serve over rice topped with sliced green onions and sesame seeds.
