I think there are two sides to the brownie/blondie debate- and you guys, I have to say, I am right down the middle. I LOVE a good brownie and a good blondie- whether they’re thick and chewy or fluffy and cakey. These err more on the cakey side of things- without sacrificing moistness- or flavor! With only a few simple ingredients, they’re easy to make for any occasion- and they’ve been a delicious go-to afternoon snack when my sweet tooth kicks in.

Whether you’re a chewy blondie lover or a cakey one, these will not disappoint!

Cakey Almond Flour Blondies

  • Yield: 1 8×8″ pan (about 912 blondies) 1x

Ingredients

Scale

1 1/2 cups almond flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt
2 eggs
1/4 cup ghee or melted butter (extra for pan)
1/4 cup maple syrup (or honey)
1/4 cup coconut sugar or brown sugar
1 tsp vanilla extract
1/2 cup chocolate chips (or as much as you desire!)


Instructions

1. Preheat oven to 350. Grease an 8×8″ glass pan and set aside.

2. In a large bowl, whisk together all dry ingredients. In a separate bowl, whisk eggs, ghee or butter, maple syrup, coconut sugar and vanilla extract.

3. Stir wet into dry until smooth. Stir in chocolate chips (as many as your heart desires!)

4. Smooth mixture into pan in an even layer. Bake in oven 22-25 minutes until a toothpick comes out clean. Let cool 5-10 minutes until slicing.

Store in the fridge- trust me on this one!
