I don’t know about you, but as adventurous as I can be in the kitchen, I find it pretty easy to get into ruts when it comes to cooking dinner! We tend to buy the same cuts of meat over and over again, because it’s easy and we have our favorite recipes we stick to, aside from creating recipes. And, because we’re so picky about the quality of meat we buy (which, arguably, everyone should be!) budget is always on the mind because we could easily spend way too much on quality cuts of meat. That’s why, when I discovered ButcherBox a few months ago, after hearing about it from a few friends in the online space, I was super excited to give it a try. Basically, it’s an online purveyor of quality (grass-fed, pasture raised, hormone and antibiotic-free) meats and poultry at a very reasonable price– so we’ve been able to experiment with cuts of meat I haven’t used since culinary school, and some favorites we just haven’t picked up in a while (pastured pork isn’t cheap!), like pork chops! It’s safe to say- I’m a fan.

Pork chops are one of those unassuming cuts of meat that are pretty boring on their own- but that’s what makes them versatile! For this recipe, I chose a schnitzel-like feel with a simple, grain-free breading for a tasty, savory dinner protein that’s beyond easy to throw together. Everyone loved it and we’ve made it again and again since!

Oven Baked Pork Chops 
Serves 4

4 4-oz pork chops, sliced thin or pounded 
2 eggs
2 tbsp almond milk (or other non-dairy milk), whisked 
1 cup almond flour 
2 tsp Italian seasoning 
1/2 tsp paprika
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp sea salt 
more sea salt and black pepper, as needed 

1. Preheat oven to 375. Place a rack on top of a baking sheet and spray to avoid sticking. 

2. In a deep sided bowl or pan, whisk together eggs and milk. Season lightly with salt and pepper. In a separate one, mix together almond flour and seasonings. 

3. Dredge each pork chop in egg mixture, followed by almond flour mixture, making sure to pat breading to ensure mixture sticks.

4. Place on rack and bake in oven for 15-20 minutes, until meat is cooked through. 

Mix it up:
-Swap out italian seasoning for cumin and a dash of chili powder for a more smoky taste 
-Use herbs de provence for a lighter flavor
