Bake sales are tough when you have a corn-free kid. Most anything baked from a box or bought from a store has some sort of corn in it. Which makes it hard to have to say “no” to your kid (and yourself!) all the time. I’m all about that 80/20 life– nourishing ourselves first with real food, but enjoying ourselves too– there’s nothing wrong with a brownie from time to time. But wouldn’t it be amazing if we could have our brownies and eat them, too? What I mean by that is– what if we could make brownies, that almost weren’t even a treat at all, full of real, nourishing foods- and just as delicious. Enter these fudgy, fluffy, 7-ingredient brownies. Good enough for a bake sale, and healthy enough for snack time– a special secret ingredient makes them not only gluten- and grain-free, but packed with nutrients like potassium, B-vitamins and fiber. Have you guessed it yet? Black beans. EWWWW! Just kidding. You really can’t taste them AT all, and if you think your kids are going to be grossed out, just don’t let them see you make them. Secret Ingredient Bake Sale Brownies Makes 1 8×8″ pan of brownies1 can black beans, drained, rinsed and dried well3 eggs3 tbsp melted coconut oil1/4 cup cocoa powder3/4 cup coconut sugar pinch sea salt1 tsp baking sodasplash vanilla extractoptional: chopped nuts and/or mini chocolate chips to top1. Preheat oven to 350. Spray or grease a glass baking dish with coconut or avocado oil.2. Add black beans, eggs and coconut oil to the bowl of a food processor or high-speed blender. Blend until smooth. Add cocoa powder, coconut sugar, sea salt, baking soda and vanilla. Blend until well-combined.3. Pour evenly into baking dish. Top with nuts and/or chocolate chips as desired. Bake for 30 minutes. Let cool completely before serving.
