Basic Cassava Flour Muffin Recipe

Ingredients

1 1/2 cups cassava flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp sea salt
3 eggs
1/2 cup plain applesauce
1/2 cup honey or maple syrup 
1/3 cup milk (whole milk or dairy-free milk)

1/4 cup melted butter or ghee (avocado oil works here, too)
1 tsp vanilla extract

 
 

Instructions

  1. Line a muffin tin with paper (I love using parchment squares) or silicone liners. Preheat oven to 350.
  2. In a large bowl, whisk together wet ingredients. In a separate bowl, whisk dry ingredients. Combine well. Add fillings (if using).
  3. Pour into lined muffin tin and top with toppings if using.
  4. Bake for 23-25 minutes until a toothpick comes out clean. Let cool before enjoying!

Notes

Variations:
 
Morning Glory:
To basic batter, add:
1/2 cup shredded carrots
1/2 cup shredded apple
1/4 cup chopped walnuts
1/2 tsp cinnamon
Top with walnuts and a sprinkle of coconut sugar.
 
Blueberry:
To basic batter, add:
1 heaping cup fresh or frozen blueberries
1 tsp vanilla or lemon extract to
Top with fresh blueberries.
 
Strawberry Chocolate Chunk:
To basic batter, add:
1 cup chopped fresh or 3/4 cup crumbled freeze-dried strawberries
1/2 cup dark chocolate chunks (or chips)
 
Top with crumbled freeze-dried strawberries and a few chocolate chunks.
