I love a good no-fuss recipe, especially when it comes to meal prep! We rely on pre-prepped lunches all week long, especially now that our kids are a little older and eat more at dinner- leaving less leftovers! This cranberry pecan chicken salad screams fall, and with only eight ingredients (and that includes salt) and a 10-minute prep time, it’s a perfect addition to your weekly get-ready-for-the-week prep.

Cranberry Pecan Chicken Salad


Ingredients

Scale

1/2 cup mayonnaise (I like avocado oil based)

2 tsp maple syrup

2 tsp apple cider vinegar

pinch sea salt

1/4 cup chopped celery

1/3 cup chopped pecans

1/3 cup dried cranberries

2 cups cooked chicken, chopped or shredded


Instructions

  1. Combine mayonnaise, maple syrup, apple cider vinegar and sea salt. Whisk well.
  2. Toss dressing with remaining ingredients. Taste for seasoning and serve.
