
I love a good no-fuss recipe, especially when it comes to meal prep! We rely on pre-prepped lunches all week long, especially now that our kids are a little older and eat more at dinner- leaving less leftovers! This cranberry pecan chicken salad screams fall, and with only eight ingredients (and that includes salt) and a 10-minute prep time, it’s a perfect addition to your weekly get-ready-for-the-week prep.


Cranberry Pecan Chicken Salad

Ingredients
1/2 cup mayonnaise (I like avocado oil based)
2 tsp maple syrup
2 tsp apple cider vinegar
pinch sea salt
1/4 cup chopped celery
1/3 cup chopped pecans
1/3 cup dried cranberries
2 cups cooked chicken, chopped or shredded
Instructions
- Combine mayonnaise, maple syrup, apple cider vinegar and sea salt. Whisk well.
- Toss dressing with remaining ingredients. Taste for seasoning and serve.
