Avocado oil (or other neutral oil)
1 bag cauliflower rice (fresh or frozen) OR 1 cup white rice
2 cans or 3 cups cooked black beans, drained and rinsed
1 cup quartered grape tomatoes
2 cups steamed corn (from fresh or frozen)
2 avocados, sliced
1/2 cup cotija cheese, crumbled (feta works, too)
1/4 cup chopped fresh cilantro
1 lime, sliced
Sautee fresh or frozen cauliflower rice in a small amount of oil with salt and garlic powder until cooked through,
Layer rice, black beans, corn and tomatoes.
Top with avocado sliced, chopped cilantro, cotija cheese and a lime wedge.
