Ingredients

    • 1/2 cup creamy peanut butter

    • 1/3 cup honey or maple syrup

    • 1/4 cup coconut oil + 2 tsp

    • 1 tsp vanilla extract

    • 1 3/4 cups rolled oats

    • 1/2 cup finely shredded coconut

    • 1/4 cup chia seeds

    • 1/4 cup ground flax seeds

    • pinch salt

    • 1/3 cup mini candies or mini chocolate chips

    • 1/2 cup chocolate chips (to melt- we use Lily’s)

    • 23 tbsp sprinkles (or as many as your heart desires- optional)


Instructions

  1. Line an 8×8″ baking pan with parchment paper. In a large bowl, combine peanut butter, honey or maple syrup, coconut oil and vanilla. Whisk well until smooth.
  2. Stir in oats, shredded coconut, chia seeds, flax seeds and a pinch of salt. Stir in chocolate chips or candies.
  3. Press into parchment lined pan (I like to add another piece of parchment over top and use the bottom of a glass to press it well!).
  4. Place in the freezer for 15-30 minutes.
  5. While freezing, melt chocolate chips over a double boiler or in microwave in 10-15 second intervals, stirring each time, with 2 tsp coconut oil.
  6. Remove bars from freezer. Drizzle with melted chocolate and sprinkle with sprinkles. Top with another drizzle of chocolate and place back in freezer for 10-15 minutes to harden chocolate.
  7. Store in fridge until ready to enjoy.
