Ingredients
Scale
-
- 1/2 cup creamy peanut butter
-
- 1/3 cup honey or maple syrup
-
- 1/4 cup coconut oil + 2 tsp
-
- 1 tsp vanilla extract
-
- 1 3/4 cups rolled oats
-
- 1/2 cup finely shredded coconut
-
- 1/4 cup chia seeds
-
- 1/4 cup ground flax seeds
-
- pinch salt
-
- 1/3 cup mini candies or mini chocolate chips
-
- 1/2 cup chocolate chips (to melt- we use Lily’s)
-
- 2–3 tbsp sprinkles (or as many as your heart desires- optional)
Instructions
- Line an 8×8″ baking pan with parchment paper. In a large bowl, combine peanut butter, honey or maple syrup, coconut oil and vanilla. Whisk well until smooth.
- Stir in oats, shredded coconut, chia seeds, flax seeds and a pinch of salt. Stir in chocolate chips or candies.
- Press into parchment lined pan (I like to add another piece of parchment over top and use the bottom of a glass to press it well!).
- Place in the freezer for 15-30 minutes.
- While freezing, melt chocolate chips over a double boiler or in microwave in 10-15 second intervals, stirring each time, with 2 tsp coconut oil.
- Remove bars from freezer. Drizzle with melted chocolate and sprinkle with sprinkles. Top with another drizzle of chocolate and place back in freezer for 10-15 minutes to harden chocolate.
- Store in fridge until ready to enjoy.
