Ingredients

Scale

Dry: 

  • 1 3/4 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt

Wet:

  • 1 egg
  • 1/2 cup egg whites
  • 4 tbsp maple syrup or honey
  • 1/3 cup plain greek yogurt*
  • 1/2 tsp vanilla extract

Cooking spray, as needed to cook

Maple syrup and favorite toppings to serve

Options:

  • Chocolate chip: stir in 1/2 cup dark chocolate chips (we like Lily’s brand, sweetened with stevia)
  • Banana blueberry: replace greek yogurt with banana (see notes) and stir in 1/2 cup blueberries
  • Cinnamon: add 1/2 tsp cinnamon to dry ingredients
  • Apple spice: stir in 1/2 cup shredded apple and 1/2 tsp apple or pumpkin pie spice to dry ingredients

Instructions

  1. Preheat waffle maker and spray with cooking spray.
  2. In a blender, combine all dry ingredients. Blend until oats are a fine meal.
  3. Add in wet ingredients and blend until combined. Stir in any mix-ins (see options).
  4. Pour 1/3 cup mixture into large waffle maker or 1/4 cup into smaller waffle makers (do not overfill!). Cook over medium until just firm. Serve with butter, coconut oil or peanut butter and your favorite toppings (maple syrup is a must!).

Notes

  • Replace greek yogurt with 1/3 cup (about 1 medium) mashed banana for banana waffles- reduce oats by 1/4 cup (bananas are fibrous).
  • These keep in fridge for 3-4 days, or freeze and reheat in toaster oven or toaster!
