Ingredients

Scale

1 1/4 cup Whole milk greek yogurt
1/4 cup Cream (option to omit and use water to thin)
1 tbsp Lemon juice (or apple cider vinegar)
2 tbsp Fresh chives (chopped)
2 tbsp Fresh parsley (chopped, or 2 tsp dried)
1 tbsp Fresh dill (chopped, or 2 tsp dried)
1/2 tsp Sea salt
1/2 tsp Garlic powder
1/2 tsp Onion powder
Cracked black pepper (as needed)

For salad: 

2.5 cups shredded chicken (about 2 chicken breasts) 1/4 cup finely diced celery 1/3 cup finely diced red onion
1/2 cup shredded carrots
1/2 cup chopped banana peppers
1 cup homemade ranch dressing (see below)
sea salt, to taste


Instructions

  1. Prepare ranch dressing of choice (see notes) by whisking all ingredients in a small bowl. Add cream or water to desired thickness. Season to taste.
  2. Combine chicken and chopped vegetables in a large bowl.
  3. Add ranch and stir to combine. Taste for seasoning and serve.

Notes

Note: You can use my homemade herb ranch recipe in place of the greek yogurt ranch, if you prefer!
