When it comes to getting dinner on the table, I am all about the simplicity. I firmly believe meals do not have to be complicated or have dozens of ingredients to be delicious and satisfying- and these 5-ingredient meatballs are the perfect example!
Gluten and grain-free and super moist without the use of breadcrumbs, not to mention packed with healthy fats, we love to throw them over a pile of spaghetti squash with some sauce or pesto and call it a day (or well, dinner!). They’re easy to prep ahead and freeze well if you want to make a double batch for another quick dinner– I mean, does it get easier than five ingredients (ok, technically there’s six if you include salt!)??
