If you’re looking for a better-for-you granola bar for your kids, you need to try these easy, nutrient-packed monster granola bars!
My kids love a good granola bar drizzled with chocolate- but often times they’re filled with not-so-great ingredients (and yes, we’re allll about balance over here- but why not make them if you have the time?!)- these granola bars are sweet and delicious, but also packed with nutrient-dense ingredients like whole grain oats, chia seeds and flax (and chocolate chips, of course!). We topped them with some fun Halloween sprinkles (these are from Trader Joe’s!).
Feel free to swap the mini chocolate chips for mini m&ms or chopped nuts, instead!
Monster Granola Bars Makes 10-12 bars
Ingredients:
1/2 cup creamy peanut butter
1/3 cup honey or maple syrup
1/4 cup coconut oil + 2 tsp
1 tsp vanilla extract
1 3/4 cups rolled oats
1/2 cup finely shredded coconut
1/4 cup chia seeds
1/4 cup ground flax seeds
pinch salt
1/3 cup mini candies or mini chocolate chips
1/2 cup chocolate chips (to melt- we use Lily’s)
2-3 tbsp sprinkles (or as many as your heart desires- optional)
Instructions:
Line an 8×8″ baking pan with parchment paper. In a large bowl, combine peanut butter, honey or maple syrup, coconut oil and vanilla. Whisk well until smooth.
Stir in oats, shredded coconut, chia seeds, flax seeds and a pinch of salt. Stir in chocolate chips or candies.
Press into parchment lined pan (I like to add another piece of parchment over top and use the bottom of a glass to press it well!).
Place in the freezer for 15-30 minutes.
While freezing, melt chocolate chips over a double boiler or in microwave in 10-15 second intervals, stirring each time, with 2 tsp coconut oil.
Remove bars from freezer. Drizzle with melted chocolate and sprinkle with sprinkles. Top with another drizzle of chocolate and place back in freezer for 10-15 minutes to harden chocolate.
