Oat Flour Banana Muffins

Ingredients

2 cups oat flour (store bought or homemade)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon (optional)
1/4 tsp sea salt
1/4 cup cane sugar or brown sugar
1/4 cup maple syrup
1/4 cup melted butter
1/2 cup mashed banana (about 12 small or 1 large)
1/4 cup greek yogurt
1/4 cup milk of choice
1 egg
1 tsp vanilla extract 


Instructions

1. Preheat oven to 350. Line muffin tins with muffin liners (I like reusable) or parchment.

2. In a large bowl, mix wet ingredients. In a separate bowl, whisk together dry ingredients until fully combined.

3. Slowly whisk dry ingredients into wet until combined (do not over-mix!).

4. Bake for 18-22 minutes, until a toothpick comes out clean from the center.
