Greek Herb Salmon Skewers

1/4 cup extra virgin olive oil
1/4 cup lemon juice
2 tsp dried oregano
1 tsp dried parsley*
1 tsp dried basil*
1/2  tsp dried marjoram*
1/2 tsp thyme*  (*or use 3 tsp Italian seasoning)
2 cloves garlic, minced
big pinch sea salt

1 lb salmon


1. Whisk together all marinade ingredients.

2. Gently mix marinade with salmon. Let marinate for at least 30 minutes or up to 6 hours in the fridge.

3. Remove from marinade and pierce onto wooden skewers (soaked in water if using on a grill)

4. Grill or pan-sear for ~1-2 minutes per all four sides until just cooked through.
