
Simple, flavorful and family friendly is the name of the game when it comes to cooking and creating recipes in my house. These simple salmon skewers fit the bill!They only require a little pre-prep- stirring together a quick marinade and letting them sit for a while to soak in the herby goodness- and then they’re ready to go in minutes on the stove or grill!
They’re the perfect patio dinner or addition to your next BBQ, this summer!

Herb Salmon Marinade:
1/4 cup extra virgin olive oil
1/4 cup lemon juice
2 tsp dried oregano
1 tsp dried parsley*
1 tsp dried basil*
1/2 tsp dried marjoram*
1/2 tsp thyme* (*or use 3 tsp Italian seasoning)
2 cloves garlic, minced
big pinch sea salt
- Whisk together all marinade ingredients.
To it, add:
1 lb salmon- cubed
- Gently mix marinade with salmon. Let marinate for at least 30 minutes or up to 6 hours in the fridge.
- Remove from marinade and pierce onto wooden skewers (soaked in water if using on a grill)
- Grill or pan-sear for ~1-2 minutes per all four sides until just cooked through.
We served ours with rice and a simple cucumber salad (sliced cucumber, fresh dill, olive oil, apple cider vinegar and sea salt).
