If you’ve never enjoyed a really fresh medjool date, please take the time now- it’s like nature’s candy, with it’s sweet, caramel-like flavor. Combined with some almonds and a hefty pinch of sea salt, and you’ve got salted caramel bliss- with only four ingredients. These have become a favorite snack in our house, and I think they’ll be for you, too!

Salted Caramel Energy Balls

  • Yield: 18-20 balls

Ingredients

1 cup raw almonds

1 cup medjool dates, pitted

1/3-1/2 cup salted almond butter (or plain almond butter with pinch sea salt)

1/2 tsp vanilla extract

optional: 1-2 scoops collagen for extra protein


Instructions

  1. In a food processor, combine almonds and dates. Pulse until chopped.
  2. Add almond butter and vanilla extract and blend until combined.
  3. Form into 1-2 inch balls, roll and set in freezer or fridge for 10-20 minutes before serving.
