This mango black bean salsa is absolutely delicious, comes together in minutes, and as it’s naturally gluten-free, dairy-free and plant-based it’s a total crowd pleaser. Serve it up with your favorite tortilla chips and you’re off to the party!
Mango Black Bean Confetti Salsa
Ingredients:
1 can black beans, drained and rinsed
1 medium ripe mango, peeled and diced
1/2 cup finely chopped red bell pepper
1/4 cup finely chopped red onion
1/4 cup finely chopped seeded jalapeno
1/4-1/2 cup fresh chopped cilantro
zest of 1 lime
juice of 1 large lime (more as desired)
2 tbsp avocado oil
1/2-1 tbsp honey (depending on desired sweetness)
1/8- 1/4 tsp chipotle or chili powder
pinch salt
Instructions:
- Whisk together dressing ingredients.
- Toss dressing with remaining ingredients. Let sit 5-10 minutes before serving.
