Ingredients

1/2 cup mayonnaise (preferably homemade!)
1–2 tbsp lemon juice (juice of 1/2 large lemon)
1/4 cup fresh chopped dill
1/4 tsp sea salt
1/4 cup finely chopped red onion
1 cup persian or seedless cucumber, diced smallĀ
2 cups chopped or shredded cooked chicken
Instructions
- Whisk together mayonnaise, dill, lemon juice and salt. Season more to taste if desired.
- Toss together cucumber, red onion and chicken and stir into dressing. Taste for seasoning and serve. Stores in fridge for 2-3 days (if it lasts that long!)
