Could it get easier than a five-ingredient chicken salad? I mean, really. And I am ALL about the simple, in this house. Especially in the summer. No one wants to spend hours in the kitchen when it’s 80 degrees out- which is why we rely on light prep, and simple ingredients- like this deliciously easy cucumber dill chicken salad. It’s both refreshing and filling, perfect for picnics or an easy-grab lunch at home.

Cucumber Dill Chicken Salad
1/2 cup mayonnaise (preferably homemade!)
1-2 tbsp lemon juice (juice of 1/2 large lemon)
1/4 cup fresh chopped dill
1/4 cup finely chopped red onion
1 cup persian or seedless cucumber, diced small
2 cups chopped cooked chicken
- Whisk together mayonnaise, dill and lemon juice. Season to taste if desired.
- Toss together cucumber, red onion and chicken and stir into dressing. Taste for seasoning and serve. Stores in fridge for 2-3 days (if it lasts that long!)
