In case you were wondering what the first thing you should make with your brand new batch of homemade mayo is, it’s this chicken salad.

Could it get easier than a five-ingredient chicken salad? I mean, really. And I am ALL about the simple, in this house. Especially in the summer. No one wants to spend hours in the kitchen when it’s 80 degrees out- which is why we rely on light prep, and simple ingredients- like this deliciously easy cucumber dill chicken salad. It’s both refreshing and filling, perfect for picnics or an easy-grab lunch at home.

Cucumber Dill Chicken Salad

1/2 cup mayo (preferably homemade!)
2 tsp lemon juice
1/4 cup fresh chopped dill
pinch sea salt (optional)
1/2 medium cucumber, diced small
2 cups chopped cooked chicken

  1. Whisk together mayo, dill and lemon juice. Season to taste if desired.
  2. Toss together cucumber and chicken and stir into dressing. Taste for seasoning and serve. Stores in fridge for 2-3 days (if it lasts that long!)
