Anyone else craving allll the fresh flavors? I feel like I say that every day in the springtime, but it feels like such a relief to be (mostly) done with the cold and ready to eat on the balcony, overlooking the marsh behind our house, watch the birds and enjoy fresh food- like these greek chicken wraps, perfect on the grill (or a grill pan, if you don’t have a grill!). The hardest (and when I say hard, I mean EASY) part of this recipe is just marinating the chicken and waiting– but I promise, it’s worth the wait!
Once your chicken is marinated, you can grill or sear it as you enjoy- top with the toppings and easy tzaziki (see below) and enjoy in no time!
Greek Yogurt Marinated Chicken:
- ~1/2 cup greek yogurt
- juice of 1 lemon
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp each dried oregano + thyme
- 1/2 tsp sea salt
- 2 lb boneless skinless chicken thighs or chicken tenders.
Whisk marinade ingredients together. Coat chicken and let marinate at least 2 hours to overnight.

To prepare the chicken:
- Prepare marinade and marinate chicken at least 2 hours ahead, up to overnight.
- To cook chicken: Heat a large pan or grill (I prefer a grill pan or cast iron; a sautee pan will do!) to medium-high with a drizzle of oil to prevent sticking.
- Slice chicken into long strips (alternately, you can skewer into kabobs for quicker cooking). Once hot, place chicken in an even layer on pan and cook until golden, about 5-6 minutes. Flipping and continue to cook until done (around another 5-6 minutes, depending on the size of your pieces.
- While chicken is cooking, prepare tzaziki sauce.
Ok, let’s talk tzaziki sauce. Tzaziki is sold in pretty much every grocery store I’ve come across- sometimes as greek dill and cucumber yogurt dip (which it is!), but it is SO easy to make at home. The most important part for texture is making sure to squeeze out those cucumbers (to avoid it becoming too liquidy) and letting sit for just a few minutes to let all of those flavors come together. It is SO good, and great on top of bowls and wraps alike- as well as as a dip for more cucumbers, carrots, peppers or pita chips!
Easy Tzazki Recipe:
- 1/4 cup shredded cucumber
- 1/2 cup greek yogurt
- 2 tbsp lemon juice
- 1 tsp olive oil
- 1 clove garlic, minced
- 2 tbsp fresh dill
- sea salt to taste
To prepare: Grate cucumber and place on top of a paper towel for a minute or two. Squeeze any excess liquid. Combine with remaining ingredients and let sit at least 10 minutes. Season to taste.
To assemble: layer pita first with lettuce, cucumber, tomato and onion, chicken, olives and feta cheese. Top with tzaziki and enjoy (outside preferred!)Print
