You guys might gather by now I have an affinity for finger food- and so do my kids! I’ve written a few different chicken tender (or finger, whatever you like to call them!) recipes, Kid-friendly Taco Chicken Fingers, Grain-free Chicken Tender Parmesan, and we can’t forget the Crunchy Southwest Chicken Salad with Smoky Southwestern Crunchy Chicken. And the kids love all of those– but when we decided to go ahead and make these– essentially the classic grain-free Italian chicken tenders with a bit of parmesan added, paired with some pizza sauce for dipping– all bets were off. These are SO good, my kids ask for them weekly! Bonus- they’re really simple to make, as well.
They work great cut up in a lunch box- use breadcrumbs instead of almond flour for a nut-free school.
