The time has come! I’m sharing this year’s TOP LOVED recipes of 2022- the top shared on Pinterest, Instagram and more! Starting with my new favorite cookie recipe… all the way to this year’s TOP recipe (I’m not surprised!). Which one was your favorite?? Share with me over on Instagram!
I’ll be taking the week off to spend with my family- be sure to tune into the Healthy Mama Kitchen Podcast for one last episode and a 2022 recap while I’m gone! Happy holidays and happy new year!
10) White Chocolate Peppermint Cookies
I took what is my personal favorite base cookie recipe and transformed it into the most delicious, chewy, sweet (but not too sweet) cookie- featuring that delicious white chocolate peppermint combination. These are perfect alongside a hot mug of coffee or cocoa, ideally while sitting in the twinkly lights of the Christmas tree.
9) Maple Balsamic Quinoa & Kale Salad With Crispy Chickpeas
I don’t know about you, but I’m just not the biggest fan of salads in the winter time. The ingredients I typically love in salads aren’t fresh and in season, and salads are usually cold and light- whereas I love warm, hearty meals in the colder months of the year.
Enter this salad- made with ingredients that are both easily accessible and still fairly fresh in the winter, with hearty quinoa and crispy spiced chickpeas that make it feel like a solid and filling meal, rather than that light, fresh salad I love in the spring and summer.
Coffee, brown sugar, BBQ seasoning… there might not be a better match made in heaven, unless of course you combine all three and rub it on some chicken wings- bake them for oh, 40 or 45 minutes so you have the crispiest, savory/sweet wing combination you’ll ever eat… no frying necessary! Enter: coffee bbq dry rubbed chicken wings. Perfect for your next Superbowl party, get-together or just a fancy-feeling date night at home.
7) Greek Chicken Skillet & Fresh Herb Orzo Salad
I adore Greek inspired food, especially in the summer. Fresh herbs, bright raw tomatoes and cucumber, briny feta. It screams warm weather and dinners al fresco- this dinner included! This 30-minute meal can be prepared in the oven or on the grill, with a quick dairy-free greek marinade paired with a fresh and herby orzo salad (prep tip: prepare the orzo 1-2 days in advance to save on cooking time and extra heat!) that’s prepared as the chicken is marinating.
6) Sheet Pan Flank Steak Fajitas
We love steak in our house– but steak can be pretty darn expensive, especially when you’re serving a family. These sheet pan steak steak fajitas utilize a marinated flank steak for the best texture- at a lower price point than ribeye or sirloin, with the addition of an easy weeknight sheet pan preparation.
Want to add a little fun to your kiddos’ school lunch boxes (with a sneaky side of extra nutrition, as well)?! Make these no-bake monster energy balls for a fun lunchbox side that’s (mostly) healthy- but feels like a treat!
Speaking of back to school… these homemade pizza pockets were also a hit! These homemade pizza pockets not only feel fun- but they’re a great make-ahead main using shortcut options! p.s. They work great for an easy dinner, as well!
3) Creamy Tuscan Sun Dried Tomato Orzo Soup
This must have been the year of soup… because the top 3 recipes are all soup! I love any sort of Mediterranean flavors- especially when it involves sundried tomatoes, lemon and/or orzo! But up until now, I’ve reserved some of my favorite flavors to spring and summer– not anymore! This soup is comforting, warm and filling– with all the flavors of the Mediterranean in a presentation fit for the fall and winter.
2) Copycat Olive Garden Chicken Gnocchi Soup
Chicken Gnocchi Soup is basically Chicken Noodle Soup’s Italian cousin, with gnocchi in place of the noodles (YUM), Italian seasonings (I use a blend to keep it simple) and a little cream stirred in at the end (leave it out to make it dairy-free- it’s just as delicious).
1) Classic Broccoli Cheddar Soup
Am I surprised this recipe made it as number one?? Not in the least bit. A twist on your favorite from you-know-where, The recipe is classic and made with all real food ingredients- that means real cream, real butter- and a whole lot of veggies, to boot. It’s pretty similar to a soup many of us know and love from a familiar restaurant chain- only better, because it’s made from home, with love- in only 20 minutes or so. Happy cozying up!
