Ingredients
zest of 1 large lime
juice of 1 large lime
3 tbsp olive oil
1 tbsp honey
pinch salt
8 cups watermelon, cubed and chilled
1/4 cup chopped fresh mint leaves
1/2 cup feta (in the brine), crumbled
Instructions
1. In a large bowl, combine lime juice and zest, olive oil, honey and pinch salt.
2. Gently toss watermelon with dressing. Lightly fold in mint and feta.
3. Top with extra feta and mint leaves if desired. Serve cold!
This was so delicious, and I will make this again and again. Mint is a perennial that grows plentiful in Michigan and the plant is green well into November in a large pot outside. I had a lot on my mind so I messed up and put in three tablespoons honey for the dressing. It’s delicious that way too.
